The multiple award-winning Banyan Tree Hotels & Resorts has been conceptualized as a “Sanctuary for the Senses” whose beautiful properties can be found in stunning locations such as the Seychelles, the Maldives, Bintan (Indonesia), Phuket (Thailand), Bangkok (Thailand), Ringha (China) and Lijiang (China).

In partnership with the iconic and landmark development the Meydan Racecourse, Banyan Tree will be operating “The Meydan” Hotel consisting of 280 Suites, 5 spectacular restaurants, a signature Banyan Tree Spa and meeting facilities for up to 400 guests.

We are looking for a highly motivated candidates who is passionate about the job and career in the hotel industry.

Cafe Manager's Responsibilities:

1. Responsible for organizing, planning and controlling of day-to-day operations of the cafeteria.
2. Responsible for maintaining HACCP cleanliness and hygiene standards.
3. Responsible for regular check-up of food quality, presentation and set-up of buffet and salad bar on every meals.
4. Responsible for staff food complaints and suggestions to be attended to and resolved to report to Human Resources Manager/Executive Chef.
5. Responsible for assisting and planning of menus.
6. Responsible for organizing staff duty roaster.
7. Responsible in suggesting measures to minimize operational cost.
8. Responsible in carrying out monthly inventories of stores, equipments, etc.
9. Responsible for maintaining prepare food store requisition for cafeteria.
10. Responsible for maintaining prepare Beverage requisition for cafeteria meals.
11. Responsible for checking on cruets, sauces and napkins.
12. Responsible for timely meal service as per timings outlined for cafeteria.
13. Responsible for re-stocking fridges with refreshment for the next day for cooling.
14. Responsible for maintaining the daily Logbook.
15. Responsible for set-up the cafeteria for the following day after the meals service is over.
16. Responsible for checking cafeteria buffet at regular intervals.
17. Responsible for conducting a random check of the garbage for cutleries.
18. Responsible for the food tasting when the food arrives.
19. Responsible for checking the maintenance work and follow-up with Engineering.
20. Responsible for washing the cafeteria floor weekly.
21. Responsible maintaining inventory of the cutlery crockery glassware, cruets, ashtray.
22. Responsible for ensuring that water glasses & plates, bowls are de-scaled as per schedule.
23. Responsible for making sure the caterer are providing the food as per the approved menu and the quantity is sufficient.
24. Responsible for making sure and receives staff feedback after each meal and communicates to the relevant heads.
25. Responsible for making sure staff feedback are received after each meal and communicates to the relevant heads.
26. Responsible for following up with Engineering to clean the A/C & water filter whenever required.
Requirements

Requirements
- With 3 – 4 years relevant experience in similar position in a International Luxury hotel

- Efficient in handling Associate Cafeteria with a capacity of 800 associates from Management to Junior Levels

- A hygiene professional with thorough knowledge of Kitchen Hygiene, Sanitation & Food processing.

- Can supervise the Associate Cafeteria operation and it’s personnel on a day-to-day basis

- Can manage the appropriate allocation of equipments, items etc. in the Associate Cafeteria in proper & in order

- Has a good knowledge on inventories keeping

- Computer literate with knowledge of standard office software applications

- Exposure and experience in Sanitation

- Standards and formulation & implementation of Quality Management Systems will be an added advantage

- Good communications skills in English
